About Killowen Distillery
When you see something falling short of expectations, you take the bull by the horns. That spirit is in Brendan Carty, a man who realized that Irish whiskey wasn’t living up to its history or its potential. He took matters into his own hands and built what he calls his “protest distillery.”
If there is something that needs to be tried and sounds like it will push the Irish whiskey industry forward, Brendan will try it. His little white shed distillery up in the hills harkens back to an era when the backcountry was littered with illegal stills crafting poitín and Irish pot still whiskey. Brendan went to Portugal to have his stills custom crafted and kept the focus on creating a clean spirit with as much copper contact as possible. Keeping with the old ways, his stills are fire fed and he incorporates a worm tub to create a more pleasing distillate. He also incorporates the grain that Irish whiskey forgot—oats. And he uses them liberally in his distillations, whether or not it follows the current rules. To Brendan, it is about the spirit, more than the rules.
