Covalent Spirits, housed in the historic 1920s City Garage in Westminster, has reinvigorated the local distilling scene since Jenn and Drew partnered to open in 2019. Their mission to revive Westminster's distilling legacy, dormant since 1970, is evident in their diverse spirits offerings. Highlights include a bourbon blend of 4-6 year old straight bourbons, alongside vodka, gin, rum, and experimental spirits. Visitors can enjoy food truck fare or bring their own, complementing flights and expertly crafted cocktails.
