Holyrood is dedicated to exploring new recipes using heritage malts, specialty malts, and different yeasts typically used in beer production, aiming to offer something different with every release. Their motto, "Test. Learn. Improve. Repeat.," reflects this commitment to innovation.
The tour takes you through the history of brewing in Edinburgh, the history of whisky, and the birth of Holyrood in the old part of the city. You'll learn about the installation of the equipment, the barley they use to give their whisky its unique flavor, and the production processes. The standard tour culminates in a tasting of their diverse range of whiskies. A variety of other tour experiences are available. With a view of Arthur’s Seat, you can sit and sip on a whisky at their in-house bar, reflecting on the innovative spirit of Holyrood Distillery.
