About Preservation Distillery
One day, a contract distiller by the name of Marci Palatella was driving through Bardstown, when she happened upon a farm, tobacco barn, and local entertainment venue known as Hillbilly Heaven. Having a long-time dream of opening her own distillery, Preservation Distillery became a passion project and in 2014, she purchased the property and began creating her distillery.
The first thing you will notice when entering the production facility is how they shoehorned all of this equipment into such a small space. They achieved fitting a distillery into a pre-existing barn without the need of radical alterations to its outer dimensions. Their water source is from an on-site well that drills below a bed of limestone. Their grains all come from a farm right down the road in New Haven.
As of this writing, Preservation has not officially released their bourbon, but you can sample a young version of it during the tour. The other products you will sample are bourbons sourced by the owner.
